atproto-oauth-axum basic usage does not work out of the box #4

It seems an update occurs and client_uri, jwks_uri are both options and they aren't in the example. Additionally, it seems that client_name, logo_uri, policy_uri, scope, and tos_uri are all required unless the zeroize feature is enabled. I would really like to see this on the README for the crate. I am interested in doing this but would like some guidance as to what the project would like represented.
