Do not duplicate the server name #1

The server name is currently in both the Caddy config and the knotserver config, so turn it into a single parameter somewhere.

Caddy supports configuring the reverse proxy via the command line, therefore a single .env file could be used to configure both services. For example, https://tangled.sh/@mtelvers.tunbury.org/knot-docker/commit/64852d524a54989449438dac372fde129fadeac8
