8* 2 tsp of olive oil
9* 1 pound of ground chuck
10* 1 large yellow onion, chopped (about 3 cups)
11* 4 celery ribs, thinly sliced (about 2 cups)
12* 3 garlic cloves, finely chopped (about 4 tsp)
13* 1 (28 oz) can of whole, peeled plum tomatoes, drained
14* 2 tsp of dried oregano
15* 8 cups of low-sodium chicken broth
16* 1 (12 oz) package of gnocchi
17* 1 (6 oz) package of fresh spinach
18* 3 tsp of kosher salt
19* 1/8 tsp of black pepper
20* grated Parmesan cheese, for serving

24* Heat oil in a large saucepan over high heat. Add beef and coo, stirring occasionally, until browned. (~8 minutes)
25* Add onion, celery, and garlic. Cook, stirring often, until vegetables are softened. (~8 minutes)
26* Stir in tomatoes and oregano, breaking up tomatoes with wooden spoon.
27* Stir in broth and bring to a boil.
28* Reduce heat to medium-low, and gently boil until the vegetables are tender. (~8 minutes)
29* Add gnocchi, and cook until just tender. (~3 minutes)
30* Remove from heat. Stir in spinach, salt, and black pepper.
31* Sprinkle each serving with grated Parmesan.
