Ground beef vegetable soup with gnocchi

Ingredients#

  • 2 tsp of olive oil
  • 1 pound of ground chuck
  • 1 large yellow onion, chopped (about 3 cups)
  • 4 celery ribs, thinly sliced (about 2 cups)
  • 3 garlic cloves, finely chopped (about 4 tsp)
  • 1 (28 oz) can of whole, peeled plum tomatoes, drained
  • 2 tsp of dried oregano
  • 8 cups of low-sodium chicken broth
  • 1 (12 oz) package of gnocchi
  • 1 (6 oz) package of fresh spinach
  • 3 tsp of kosher salt
  • 1/8 tsp of black pepper
  • grated Parmesan cheese, for serving

Instructions#

  • Heat oil in a large saucepan over high heat. Add beef and coo, stirring occasionally, until browned. (~8 minutes)
  • Add onion, celery, and garlic. Cook, stirring often, until vegetables are softened. (~8 minutes)
  • Stir in tomatoes and oregano, breaking up tomatoes with wooden spoon.
  • Stir in broth and bring to a boil.
  • Reduce heat to medium-low, and gently boil until the vegetables are tender. (~8 minutes)
  • Add gnocchi, and cook until just tender. (~3 minutes)
  • Remove from heat. Stir in spinach, salt, and black pepper.
  • Sprinkle each serving with grated Parmesan.
