docs: clarify documentation on custom registries #323

this documentation page mentions custom registries. what are these? Nix flakes that output packages? some other black magic? where is easy-to-find documentation that explains custom registries specifically? I think it should be in docs/spindle/custom-registry.md with docs/spindle/pipeline.md linking to it.
